Tea party : Lemon cupcakes with pink lemonade frosting

I've had a little bit of interest and a couple of tweets and emails about the lemon cupcakes with pink lemonade frosting which I baked for my tea party, and thought that perhaps a few of you would like the recipe. 

These are so easy to make, and are definitely a hit with the little kids... oh, and the big kids too (I see you eying off my cupcakes, Pippa)!

Cupcake ingredients

150 g unsalted butter or margarine
150 g caster sugar
175 g self-raising flour
3 medium eggs
1 teaspoon vanilla extract
1 lemon rind, grated finely

Method

  1. Preheat the oven to 180°C. Line a 12-cupcake baking tin with paper or silicone cupcake cases.
  2. Place all of the ingredients into a bowl or food mixer and beat until creamy and light.
  3. Evenly divide the mixture into the 12 cake cases.
  4. Bake for 18-20 minutes until they have risen and are firm to touch.
  5. Cool on a wire rack.

Frosting ingredients

3 cups pure icing sugar
250g unsalted butter (room temperature)

2 tbsp frozen pink lemonade concentrate
crystals

Method

Combine all ingredients in an electric mixer fit with a paddle attachment and mix on low until combined, then increase consistency until frosting is light and fluffy.

Serve to ravenous friends, but don't let them take them home, or else they might just smear frosting on their dashboard!
